These babies are seriously the best muffins I've ever made. I made them last week with a little too much stevia. Made another batch this morning, just ate one, and deemed them The Muffin.
Best Fall Squash Muffins
180 gm kabocha
60 gm pumpkin
190 gm egg whites
60 g coconut flour
2 scoops Carnivor Vanilla Caramel Beef Protein
2 T greek yogurt
2 tsp baking powder
vanilla extract
stevia
cinnamon
pumpkin pie spice
Mix squash and pumpking with half of the egg whites. Add in remaining ingredients, mix well. Add remainder of the egg whites; mix well.
Scoop into 12 greased muffins tins. Press Cinnamon Roll Questbar chunk into batter. Bake at 350F for 22-25 minutes. Let cool 5 minutes; move to cooling rack. Store in air tight container.
Also made Wilberforce these little mini protein muffins.
And I like to eat food out of squash skins. Eating the bowl at the end makes me happy.
I've been eating a lot of gingerbread flavored stuff. Gingerbread flavored pancakes are my favorite. Besides my new perfect muffins, of course.

Last week we made some tasty football food for the Broncos game. This was my version of 7 Layer Taco Dip.
Quinoa Chili, Taco Ground Turkey, Homemade Guacamole, and Almond Cheese. Layered and broiled to melt the cheese after this picture. I made homemade coconut flour tortilla chips for dipping.
Tortilla Chips and celery...must haves for any football game.
Every morning I made a spinach cake to cut up for my zeggs. It's beautiful.

Got fitted for running shoes last weekend. Brought home these Ghost 6 Brooks shoes. Like running on a cloud, I tell ya.

I've put a good 25 miles on these shoes since I got them last Saturday. Yeah boys!

Yesterday was an awesome day with Wilberforce. I woke him up after my morning run to come with me to the gym. We did arms. It was awesome!
Then we headed to Boulder to wander around, eat some tasty food, and hang out.
But first, we had to gas up Larry. The window washer boys at the gas station are creepy.
We ate at Mod Market again. I love that place.
They have the best soup!
We also realized that we were the only two people in the entire town of Boulder who were not going to the CU/Oregon game.
