Rest Day...bru-ha-ha! I stayed in bed as long as possible. Laying in bed is almost painful for me past a certain point. There's a whole world and a sunny Sunday waiting - who wants to spend that in bed?
Not I.
So I snuck downstairs and made myself some breakfast. A couple hours later I whipped up a microwave cake for Wilberforce.
He had to work until midnight thirty last night, so being in bed until ten in the morning is acceptable.
Sweet Tater Maple Chocolate Bacon PB Cake
1 small sweet potato
3 tbsp greek yogurt
1 tbsp almond milk
2 egg whites
1 tbsp coconut flour
3 tbsp peanut flour
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp baking powder
1/4 tsp stevia powder
maple extract
1/4 Chocolate Brownie Quest Bar, chopped
2 slices turkey bacon, cooked crispy, crumbled
Bake or microwave sweet potato; remove skin; mash well. Add yogurt, egg whites; mix well. Incorporate flours, cinnamon, nutmeg, baking powder, stevia and extract. Add almond milk as needed to desired batter consistency. Stir in chopped Quest Bar and bacon crumbles.
Microwave in bowl or mug for 3-4 minutes or until cooked through. Place plate upside down on bowl or mug; flip and remove bowl or mug. Top cake with two more slices of turkey bacon (crumbled) and another 1/4 Quest Bar, baked and crumbled. Finish off with PB2 sauce and maple syrup.
I only microwaved the cake three minutes - the middle was a little gooey still, which is perfection in my book!
Wilberforce claims this was the most perfect cake ever made.
He maybe says that so I keep making him pancakes and cake and general tastiness, but I'm gonna pretend he really meant it.
It smelled freakin' amazeballs.
It looked freakin' amazeballs.
I'm gonna think it was freakin' amazeballs.
"But Manda" you might be saying. "If you think it's probably so freakin' amazeballs, why didn't you just taste it? Or better yet, why didn't you just eat the whole thing?"
Well, because my dears, I had just finished feasting on this bowl of heaven.
This is where the other half of that Chocolate Brownie Quest Bar disappeared to.
And where the other half of my kabocha squash from yesterday went.
And this is what I made myself for breakfast.
And this might be why I can't make myself stay in bed very long in the mornings.
Would you stay in bed if this was waiting to be made in your kitchen?
Didn't think so.
Life is tough when you have to decide between Sweet Tater Maple Chocolate Bacon PB Cake and Chocolate Brownie Maple Cake in Kabocha Squash.
