Chocolate Chip Cookie Dough Cake in Kabocha Squash

Finding baby kabocha squash is equivalent with finding fifty bucks in the pocket of an old winter coat.
At least if you're me.  Or anyone else who appreciates the deliciousness that God created when he made squash.

Let's review proper cake in a squash creation.

1.  Cut squash in half; remove seeds.  Place in dish with a little water; cover in plastic wrap and microwave 3-4 minutes until flesh is squiiiissssshy.

2.  Remove flesh, leaving a quarter inch thick ring of flesh with the skin.  Mix removed squash flesh with greek yogurt, egg white, baking powder, cinnamon, psyllium husk, almond meal, flavored extracts, and chopped up Quest Bar bits.

3.  Spoon batter back into squash bowl.  Microwave 3-4 minutes or until cake is cooked to desired done-ness.
 4.  Top with cocoa/pumpkin/cottage cheese mixture.

5.  Bake remainder of Quest Bar at 350F for 3-4 minutes, then broil a couple minutes until top is golden brown and crispy.  Break up baked bar into pieces and place on top of cake.
 6.  Finish off with PB2 sauce, maple syrup, and a sprinkle of cinnamon.

7.  Devour.  Bite off the hand of anyone who might even look like they want to try a bite of your creation.  This ain't kindergarten.  We don't share.
*Note to self.  Don't "plate" your food in the same bowl you cooked it in if it's glass.  It looks like you don't have clean dishes.  Or find someway to blame this on Wilberforce.  That always works.
