Cinnamon Oatmeal Pancakes - Throwback!

Back when Wilberforce and I started P90x (circa April 2012), I discovered clean pancakes.

They were miraculous.

I tried a bunch of different recipes before settling on this one as my favorite.  We ate these every morning for the full three months of P90x.  And I'm not complaining.
 I decided to attempt to get back to my original clean eating ways.  Not that my food isn't clean these days - it's just not squeaky clean.

And I like squeaky clean.
 Cinnamon Oatmeal Pancakes

1/4 cup oats
1/4 cup liquid egg whites
1/4 cup cottage cheese
1/2 tsp baking powder
1/2 tsp cinnamon
1 tbsp psyllium husk
1/4 tsp stevia powder

Blend well in Ninja or blender.  Spoon onto hot griddle (a medium low heat works well).  Let cook 4-5 minutes or until easily flipped.  Flip pancakes, let cook another 4-5 minutes or until they appear cooked through.  Stack and top with maple syrup, PB2 sauce, or a caramel yogurt sauce.

The psyllium husk makes these cakes nice and chewy.  If you aren't a fan of a chewy texture, feel free to omit the psyllium husk - no other changes needed!
