Pizza, Pizza.
One of my Instagram friends came up with idea to use my Coconut Flour Wrap recipe and turn it into pizza - genius! I saw her post while I was out grocery shopping; I cut my trip short and came home to make this.
Oh heavens.
Coconut Flour Pizza Crust
3 egg whites
1/2 Tbsp coconut flour
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp oregano
1/2 tsp basil
Whip all ingredients in a blender or Ninja. Pour onto a hot skillet; cover pan for a minute or two. Flip; cook another minute. Slide onto parchment paper lined baking sheet; cook in preheated oven (350F) for 3-5 minutes. Add toppings; place back in oven for a few minutes. Broil for a few minutes if needed to melt/brown toppings completely. Remove from oven; slice; devour.
The pizza I made today included the following toppings:
Pumpkin puree mixed with BBQ sauce
Fresh mushrooms
Previously baked Fiesta Lime tilapia
Mozarella and cheddar shredded rice cheese
Grilled broccoli
I need to perfect the baking times a little more to make the crust even more durable, but the way I baked it today I was still able to pick up slices. A divine lunch, indeed.
