Chocolate Chip Cookie Dough Pancakes

I done did it.
 Chocolate Chip Cookie Dough Pancakes.

When you add two amazing things together, like pancakes and cookie dough, the results are not additive.

They multiply.  Exponentially.  It's a mathematical miracle.
I realized as I was eating these - they aren't your average pancakes.

Duh, Manda. 

But seriously, they don't taste like the Bisquick pancakes we all grew up eating.  These taste like cake.  Cooked in a pan.

Someone was clever when they named pancakes, obviously.

Every time I eat something delicious, I have that little voice in the veeeery back of my brain that thinks "file this in the Maybe Dad Would Eat This folder".  He's old and a regular cardiac patient at the hospital; he's not what we would consider a connoisseur of clean eats.  I generally don't put pancakes in that folder because for whatever reason, I don't think Dad likes pancakes.  But he hasn't had these pancakes.  These cakes.
 I could maybe get him to eat Fluffy Coconut Pancakes - I need to come up with Elvis pancakes.  I think he likes Elvis flavored stuff.  Or pickles and peanut butter.

This, my friends, is what we call a tangent, I believe.  And now, back to the flavor of the day.

Chocolate Chip Cookie Dough Pancakes

3 Tbsp coconut flour
1 pkt stevia
1/4 tsp baking powder
1/4 tsp cinnamon
1/2 Tbsp cacao nibs
1 Tbsp greek yogurt
1/4 cup unsweetened almond milk
3 egg whites
1/4 tsp butter extract

Mix dry ingredients.  Add wet; incorporate well.  Stir in cacao nibs.  Batter should be thick.  Spoon onto heated pan; cover; cook 3-5 minutes.  Flip pancakes, remove from heat.  Pile up your stack o' cakes.

Chocolate Butter Yogurt Sauce

1 Tbsp dark cocoa powder
2 pkt stevia
1/8 tsp butter extract
2 Tbsp greek yogurt

Mix well; add water to thin as needed.

Soften Chocolate Chip Cookie Dough Quest Bar in the oven or microwave; crumbled on pancake stack.  Top with yogurt sauce.  Dive in!
 I never want these to end.  But they did.  And I cried.
 By the way, for all of you pancakers out there - it's okay.  I know.  I do it, too.

Don't be embarrassed.  It's nothing to be ashamed of.  Just go ahead and do it.  No one is watching.

Lick that plate.

  1. Holy mother of deliciousness Amanda!! I just finished breakfast and you have me wanting to lick my flippin' computer screen!! You can NEVER go wrong with cookie dough! Or anything Elvis-flavored! I actually made some Elvis pancakes a couple of years ago that were insane! http://www.kissmybroccoliblog.com/2011/05/15/pancakes-fit-for-a-king/ ....I've also done waffles and I just recently tried the whole pb/banana/bacon thing on a burger too! Yep, I'm weird! ;)

    1. GAH! I'm so incredibly making those Elvis cakes of yours while I'm on vacation! You're like the Buddha of deliciousness...or something. Ahhh waffles. Those are always a good option too. I may just eat breakfast five times every day. Six days of vacay...I've got a good 30 options to eat pancakes and waffles. PS...don't worry if you get that creepy someone-is-watching-me-i-keep-looking-over-my-shoulder-every-five-minutes feeling. I'm just stalking you through your blog and IG recipes. No biggie. MUAHAHAHAHA! :)
