Kabocha Squash Peanut Butter Chunk Chocolate Filled Mug Cake

Oh yes.  Yes I did.
 Made myself a cake and filled it with chocolately deliciousness.
 Kabocha Squash Peanut Butter Chunk Mug Cake

1/2 cup cooked kabocha
1/4 cup greek yogurt
2 tbsp almond milk
1 egg white
1/4 tsp baking powder
1/2 tbsp coconut flour
1/2 tsp cinnamon
1/4 tsp vanilla and almond extracts
stevia to taste
1/4 chocolate peanut butter quest bar, chopped into chunks

Mix all ingredients; microwave 2.5 minutes (keep the cake in the mixing bowl!) or until cake is cooked but top of cake is still concave.  If there isn't a "bowl" on the top of the cake, this technique won't work!

Mix chocolate sauce (dark cocoa, water, stevia, vanilla extract); pour on top of cake.  Add more chopped quest bar bits to the "bowl" if ya wanna!

Place a plate upside down on top of the bowl; flip quickly; shake gently until bowl releases from cake.

Top with maple syrup and PB2 sauce.
 Dig in!
 So much wonderful on a plate.
 I want more.  I want more.

  1. This looks awesome!! I cant wait to make this tonight! How do i do the bowl part?do i put it all in a bowl and then put another bowl on top of it?
