Chocolate Chunk Pancakes with Matcha Sauce

 Matcha partaaaay!

 How pretty are these tasty little morsels of fluffiness?

 So greeeeeeen.

 Matcha powder is green tea powder.  It tastes like green tea...which can be a little overpowering.

Overpowering in that "I feel like I'm grazing in a pasture" type of way.

 Easily fixed with a little greek yogurt, some stevia, a dash of vanilla extract, and a tower of chocolate chunk pancakes.

 And bananas.

Bananas are nature's sugar.

Sugar sugar.

 Gah.  Each picture of this stack kills me.

 Chocolate Chunk Pancakes
original pancake recipe from Spoonful Of Fit

3 tbsp coconut flour
1/4 tsp cinnamon
1 tbsp dark cocoa powder
1/2 tsp baking powder

3 egg whites
1 tbsp greek yogurt
1/4 cup unsweetened almond milk

1/2 chocolate brownie Quest Bar, chopped

Mix dry ingredients; incorporate wet ingredients.  Batter should be thick.  Stir in Quest Bar bits.  Spoon onto heated skillet; cover pan with lid and let cook 3-5 minutes until tops of cake are set.  Flip, remove from heat, let sit another minute.  Create stack of delicious, chocolatey pancakes.

Matcha Yogurt Sauce
1/2 tsp matcha powder
2-4 tbsp greek yogurt
1/8 tsp vanilla extract
stevia to taste

Mix ingredients.  If matcha taste too overpowering, add more yogurt and stevia.  Drizzle over pancake stack.

 PB2 or bananas.  One of these two things should always be in your breakfast.

Or not.

But one of those two things should always be in my breakfast.  Cause that's how I roll, yo.

 I shouldn't write blog posts at bedtime.  Now I wanna go downstairs and make pancakes.

 Chocolate Chunk Pancakes.

 But I'll just dream about chocolate pancakes instead.  Then I'll wake up and crank out my back and abs workout, run a little HIIT for a couple 15 minutes...all while daydreaming about chocolate pancakes.

Then I'll make chocolate pancakes.  Then I'll eat them.

 Then I'll be in chocolate pancake heaven.  Such a wonderful place to be.
