As American as apple pie.
These pancakes were ridiculous.
Reeeeeediculous.
I stood in my kitchen this morning, pondering what I wanted to refuel after my Chest and Abs workout.
Zeggs? No. Mug cake? Nah. Omelette? Psshhh, of course not. Pancakes? Hmm...this sounds promising.
But what flavor of pancakes?
Always a dilemma.
Unless, of course, you're a pancake FREAK like me, and keep a nice little list of possible pancake flavor ideas in your purse at all times. You never know when pancake inspiration will come to you.
You're weird.
I rummaged through the fridge and fruit bowl, skimmed the list, and ended up with this:
Apple Pie Pancakes. Apple Freaking Pie Pancakes.
Apple Pie Pancakes
original pancake recipe from Spoonful of Fit
3 tbsp coconut flour
1 tsp cinnamon
1/2 tsp apple pie spice
1/2 tsp baking powder
3 egg whites
1 tbsp greek yogurt
1/4 cup almond milk
1/4 tsp vanilla extract
1/4 tsp butter extract
8 drops stevia liquid
Mix dry ingredients; incorporate wet ingredients. Batter should be thick. Spoon onto heated pan. Cover pan with lid, let cook 3-5 minutes until tops of cakes are set. Flip, remove from heat and let sit another minute. Create stack.
Cinnamon Butter Sauce
2 tbsp greek yogurt
1/2 tsp cinnamon
1/8 tsp butter extract
4 drops stevia liquid
maple syrup
Mix ingredients well, add maple syrup to thin sauce to desired consistency. Spoon/drizzle on pancake stack.
Cinnamon Apples
1/4 chopped apple
1/2 tsp cinnamon
1 pkt stevia
2 drops each vanilla, butter, caramel extract
Mix ingredients; microwave 20 seconds. Spoon onto pancake stack.
EAT.
If I had a list of "make again" pancakes and "don't bother making again" pancakes, these would most definitely go on the "make again" list.
Then again, my "don't bother making again" list would be blank. I've never met a pancake I didn't like.
That would be a horrific experience.
If I put a piece of chicken on top of this, I think it would be acceptable to eat again for dinner tonight.
Or maybe a spinach leaf?
I cannot tell a lie. I heart these cakes.
And I don't even like apple pie. Go figure.
I absolutely LOVE your pancake recipes. I came across them on your Instagram, and I began making them last week. I've literally made them every morning since, and have broken through a plateau in order to lose my last 10 pounds! Mine never come out looking as pretty though :P. If you ever get a spare moment, you should post pictures of the cooking process. My batter seems to come out with a different consistency, and I'm wondering how I might be doing it differently from you. Thanks for the great ideas! :)
