Blueberry Banana Almond Nut Muffins

Sometimes ya just gotta bake.
 Especially when you have brown bananas, a handful of extra blueberries, and a day off of work.
 I'm not sure I've ever attempted to throw crap together and bake it without even a rough recipe to go from.  But I tried it!  And they turned out pretty tasty!  A little egg-y, with a little different texture than normal muffins - kinda dense - but I'll definitely make them again.
 Wilberforce liked them and since they're dairy and gluten free, they're perfect for our house!
 Blueberry Banana Almond Nut Muffins

1 1/2 medium banana
1/2 c. almond flour
2 tbsp psyllium husk
2 tbsp peanut flour
1/2 c. egg whites
1/8 tsp almond extract
1/2 tsp cinnamon
dash cloves
dash ginger
1/4-1/2 c. blueberries
1/4 c. slivered almonds

Mix all ingredients well.  Spoon into greased muffin tins.  Bake in preheated oven at 350F for 12-15 minutes until toothpick comes out clean.
 Aren't they cute?  I made mini-muffins.  I like bite sized food.
 We ate a couple and saved the rest for our prepped meals for work.  I'm excited to eat them!  Is it weird to get excited for eating prepped meals?

Maybe.

Who cares.
Happy little muffins.  You little buddies are so adorable.  And delicious.  I could just eat you up!
