A *gasp* New Mug Cake In A Squash - And Some Other Stuff

What's up, puurrrrrty cake in a squash?
I bought new plates at Target.  Can you put a price on happiness?

Yes.  And it was $2.49.

I had a chat with the Boss Lady at work and have decided to try to cut back on my coconut flour usage.  Just a little something to try to see how my happy little digestive system likes them apples.
 So I tried out my squash cake using almond meal and psyllium husk instead of coconut flour.  Oh, and I added chopped strawbabies, cause strawbabies rock my face off.  Completely, off.

This acorn squash was a little larger than usual, so I felt the need to add two egg whites, rather than just one.  In response, my cake felt the need to over flow it's squash hole and throw up all over the bowl.  A squash cake massacre.

Yum.

Almond Meal Fiber Squash Cake

Microwave half an acorn squash for 3-4 minutes, until flesh is super tender.  Scrape out flesh, leaving a 1/4 inch thick inside the skin of the squash.  Mix scraped out flesh with the following:

2 egg whites
2-3 tbsp greek yogurt
2 pkt stevia
1/2 tbsp almond meal
1/2 tbsp psyllium husk
1/8 tsp baking powder
1/2 tsp cinnamon
1/4 tsp ginger
1/8 tsp cloves
1/4 tsp almond extract
1/4 quest bar, chopped
2 tbsp chopped strawberries

Mix well, spoon back into acorn squash.  Microwave 3-4 minutes.  Top with whatev!  This particular day I mixed cocoa powder, stevia, WF caramel syrup, cottage cheese and caramel extract and dumped that on top of the cake.  I also may have added some SF maple syrup and PB2 sauce.  Maybe, baby.

And cinnamon.  Life cannot go on without cinnamon.

For reals.  I think cinnamon is good for you.  Like, seriously people.  Not even being sarcastic.

I found a scarf HALF PRICE at Target.

Yeah, bargains.

Fact: The day you wear your least warm winter coat is the day a blizzard hits.  Even if it's the end of April.


Eggs are good.  So is asparagus.  And spinach.  Mustard and ketchup are nice, too.
 Told ya so.

My meal prepping is getting a facelift.  I'm attempting to eat more clean, less "messed with" food while at work.

Example: Baked Salmon, Naked Asparagus and Sweet Taters.  I said they were naked!! Why are you looking at them!
 Pervs.

 Zoats are nice.  Strawberry Butter Zoats with Cookie Dough QuestBar chunks are better.

See?  Don't I look happy to be eating them?
 That's my stoop.  I sit on that thing every morning by the fireplace, eat my breakfast, and watch the news.

If the news is too depressing, I watch HGTV or Real Housewives on DVR.

I end up watching DVR a lot.  News is often depressing.
But my zoats make me creepily excited!  No matter what is on the news!

You know who has never eaten zoats or zeggs in his life?  Wilberforce.
 He's more of a meat, eggs, and potatoes type of guy.

Literally.  He eats a skillet full of meat, eggs, and sweet taters every morning.  They make him happy.

Zoat happy status?  Not sure.

He be food prepped and preppy.  Ready for a day of wheelin' and dealin' dem drugs, yo.
 Hunger?  Ain't nobody got time fo' dat.

I get artsy fartsy when I finish up my workout.  His and Hers Beats By Dre.
 "I put ketchup on my ketchup".  Best.  Tshirt.  Ever.
 Wilberforce says I need one that says "I eat my zucchini with zucchini".  I say "eff off, Wilberforce, I eat what I want!"

I don't really.  Say that, I mean.

I do eat what I want.

It just so happens it's often zucchini.  And ketchup.  Sometimes together.

 I like Cookie Dough Quest Bars.  I like Kabocha Squash.  I like baking them together ---

---nothing rhymes with "squash".  Boo.  I was going for a remake of "I like bread and butter...I like toast and jam"...but realized I was going nowhere with "squash".

Gah.  Foiled again.


I go to bed at 8:00pm now.  I wake up at 4:00am.  My bedroom is extremely well-lit at 8:00pm.  Lucky me.
Not.

But I did get a nice picture of my bedtime zeggs with my Pumpkin Cottage Cheese Yogurt Ice Cream on top.

Yes, yes that is asparagus.
