I have this issue with obsessions. I get stuck on one thing and can't stop.
Today's obsession? Coconut Flour Wraps. Obviously.
I decided to give a sweet treat version a try. And try I did.
Sweet Cinnamon Wrap with Green Apple Chocolate Kabocha Squash Filling
Wrap:
1/2 Tbsp coconut flour
3 egg whites
1/4 tsp stevia
1/4 tsp cinnamon
Beat ingredients well in blender or Ninja. Pour onto completely heated skillet, cover pan and cook 1-2 minutes until set, flip, cook another 30 seconds, slide onto plate.
Filling:
1 Tbsp dark cocoa powder
8 drops liquid stevia
1/4 cup pumpkin puree
1/4 cup chopped kabocha squash (baked)
1/2 tsp cinnamon
1/4 green apple, sliced
Mix cocoa powder with stevia and water until creamy consistency. Mix in pumpkin. Sprinkle squash with cinnamon and heat in microwave. Spread half pumpkin cocoa mix on wrap, add squash and remaining pumpkin cocoa mix. Top with sliced apples. Enjoy!

Mmmm, I'm ALL about the sweet wraps...and dark cocoa powder! That stuff is like CRACK!
ReplyDeleteI KNOW. Everything is dark cocoa powder-tastic in my house now. None of this regular unsweetened cocoa stuff. Ehhhrrrrmazing. And we were obviously created with the same taste buds, me thinks. ;)
