Pumpkin bread.
You'd think it was October in my world or something. No, I just love pumpkin.
I found a recipe online for low fat pumpkin bread - but of course I had to adapt it to make it even healthier. I didn't realize just how healthy I had made it until I did the caloric calculations.
The entire loaf has 550 calories.

I could eat a loaf of pumpkin bread for dinner and not really feel bad about it. Which I might do. Tomorrow.
Perfect Pumpkin Bread
Ingredients:
1 1/2 cups pumpkin puree
1 1/2 cups pumpkin puree
1 1/4 cups oat flour
3/4 cup Stevia in the Raw (cup for cup)
1 tsp baking soda
2 tsp pumpkin pie spice
1/2 tsp nutmeg
1/4 tsp cinnamon
1/4 tsp salt
2 tbsp unsweetened applesauce
6 tbsp liquid egg whites (2 large whites)
1 1/2 tsp vanilla extract
Yield: one loaf = 550 calories
Preheat oven to 350°. Grease a 9 x 5 loaf pan.
In a medium bowl, whisk together flour, sugar, baking soda, pumpkin spice, nutmeg, cinnamon, and salt. Set aside. In a large bowl mix applesauce, egg whites, pumpkin puree and vanilla; mix well. Add flour mixture, then stir until combined. Do not over mix.
Pour batter into loaf pan and bake on the center rack for 50-55 minutes, or until a knife inserted in the center comes out clean.
Wilberforce likes his pumpkin bread topped with a caramel greek yogurt sauce and maple syrup. And pecans.
And I like to steal bites while he's not looking. Don't tell.
Pumpkin Bread loaf numero two is in the oven right now. This is my favorite bread yet. Oh baby.
