Guinness and Baileys. How can that be not good?
I'll tell you how. Take a tumbler full of Guinness, drop a shot of Baileys in the tumbler, and chug as fast as possible...before it curdles.
That is not good. Not that I've tried it.
These cupcakes, however, are proof that Guinness and Baileys can be good.
My first experience with the "cone method" of filling cupcakes.
And the irish creme ganache...looks like something you would find in your yard. If you have pets.
Ok, maybe I went too far with that one. Seriously, though.
I don't care what it looks like, it tastes delicious.
The recipe for these Irish Car Bomb Cupcakes, by the by, came from Annie's Eats...duh.
The buttercream frosting has four gallons of Baileys in it. Mmmmm. I like getting a buzz from cupcake frosting, don't you?
I'm not sure what was going on with the buttercream, but I came up short while frosting. Two cupcakes short. I kinda knew ahead of time I would run short, so I tried to skimp on all the cupcakes...which resulted in peeping ganache.
See that little bit poking his head out there? Dang it.
Ah well, still tasty.
I've never made ganache before...it was easier than I thought it would be. I also didn't realize it hardens a bit. I guess I really had no idea what ganache was...I just knew it was in this recipe.
I might eat one of these babies for breakfast. A little pick me up before work.
Awwww yeah.
