What's a Sunday morning at a madhouse pharmacy without Blueberry Pancake Cupcakes for breakfast?
And lunch.
And a late afternoon snack.

These were definitely a favorite among the girls at work. Everyone has demanded the recipe.
Which, by the way, can be found at Your Cup of Cake. Will definitely be trying out more of her recipes!
I came home from work at 7:30 last night and decided the perfect way to relax would be to pour myself a nice, tall, cold, icy, crisp, refreshing glass of...water. And bake cupcakes.
Wilberforce helped. His baking responsibilities include turning the mixer on, turning the mixer off, and asking me when to do the previously mentioned two tasks. Baking cannot go on without his assistance.
I used frozen blueberries. Blech. Not pretty for garnishing cupcakes. Hence the blueberry topping on two cupcakes, and only two cupcakes.
This was my set up for food photography this morning. If I had photoshop, I would have photoshopped out the napkin fold lines. But I don't, so I won't. Plus, I'm lazy.
The cake portion tastes like...pancakes. It's crazy. Must be the nutmeg and cinnamon, which is strange, because I don't think of nutmeg and cinnamon when I think of pancakes.
The maple buttercream is amazing...the perfect alternative to pouring a bottle of maple syrup over the cupcakes. Although, now that I've typed that, I'm considering trying the maple syrup on top of the buttercream.
The recipe said it yields 24 cupcakes. I beg to differ. I had enough batter left over to make an additional 18 mini cupcakes.
I used a new frosting tip sister Cassie gave me for Christmas. It was awesome.
William gave cupcake decorating a try. It didn't work out that well. He set the frosting bag down and went back to turning the mixer on and off. Good Wilberforce.
I'll be keeping this recipe close at hand. I'm considering getting the girls from work together to have a massive baking extravaganza to bake cupcakes for the rest of the store. A little "Merry Christmas" from the pharmacy crew.
Or maybe we'll just sit in a circle with a gallon of milk at each of our sides and stuff our faces with cupcake after cupcake.
Today is my Friday. Kind of.
