I love them, and I'm not even a coffee fan.
I found a recipe for these pumpkin spice latte cupcakes from Annie's Eats...which is my new favorite place to find recipes, as it turns out.
These babies have pumpkin (hopefully, that didn't surprise you), espresso powder, cinnamon, nutmeg, cloves, and a whole heap of unhealthy things that make life wonderful.
The caramel topping - homemade! I completely ruined it...at first. I had a chunk of hardened caramel the size of Texas lodged in my whisk - I was about to toss the whole pan in the garbage, but we just kept stirring and it turned out wonderful!
I've made a bazillion kinds of cupcakes in the past few weeks, but these delicious little morsels are Wilberforce's favorite! Very pumpkin-y, very fall-y, very Thanksgiving-y, and very tasty.
Don't you just wanna unwrap it and take a big ol' bite?
Hopefully Wilberforce's co-workers are in the mood for a little Starbucks in a cupcake liner.
I don't know what I would do if I didn't have the hospital to send my baking bounty to - I'd be throwing away all this gloriousness!
Wilberforce tried the cakes first.
The anticipation is killing me!
That's a nice cupcake, Willm.
You got a little somethin' on your lip, there, Wilbur.
I had one bite. One big. giant. delicious. bite.
He had more than one bite. He had multiple bites. I am jealous.
Do yourself a favor and go make these cupcakes. They'll make your life happier.
AND they are the caloric equivalent of four gallons of Pumpkin Spice Latte from Starbucks. In one cupcake. Approximately.
Enjoy!
My employees would love you. I bake a decent amount for them but nothing this pretty!!
