So Wilberforce and I fell off the wagon and decided to go back to our old ways of eating chocolate chip cookies, cake, ice cream, pizza, and all that delicious stuff we've been depriving ourselves of for the past two years.
NOT.
Whoooooaaaa that brings me back to 1998. And that movie. What was that movie with the ridiculous dude that married that little redhead from Wedding Crashers?
BORAT. Ugh.
We watched that movie in college. W felt the need to talk like him for an entire six weeks afterwards.
What a horrible blast from the past that was.
Point is, these cookies are totally clean and healthy. And delicious. And we aren't deprived.
Sweet Potato Pumpkin PB Chunk Coconut Flour Cookies
Makes 36 cookies
1 cup liquid egg whites, whipped until stiff peaks form
1/2 cup + 2 Tbsp coconut flour
2 tsp baking powder
2 tsp cinnamon
3 droppers stevia
1 tsp pumpkin pie spice
1/2 tsp nutmeg
1/4 tsp cloves
1/2 tsp almond extract
1/2 tsp butter extract
1/3 cup pumpkin puree
1/3 cup sweet potato, cooked
3 tbsp coconut oil, soft or melted
1 chocolate peanut butter Quest bar, chopped
Mix ingredients in order listed. Stir in Quest Bar chunks last. Scoop tablespoon sized drops onto baking sheet lined with parchment paper (I used a cookie scoop) and bake oven preheated to 350F for 18-20 minutes or until tops are golden and somewhat firm to the touch. Cool. Devour.

Chocolate Chip Cookie Dough Pancakes. Wilberforce is one lucky dude, yo.
