Chocolate Elvis Bacon Pancakes

The King really knew what was up.

 These are killer pancakes.  You can't go wrong with chocolate, peanut butter, almond butter, bananas, bacon, and maple syrup.

Scientifical fact.

 Hypersalivation happenin right now.  As I'm posting and reliving this experience.

And I didn't even get to eat these puppies.

I'm gonna tell you a secret.  I break a bamboo skewer (like the ones used for grilling) in half and stick it through the stack to keep it from collapsing.

A collapsing pancake stack would bring me to tears.  No one wants to see that.

Chocolate Elvis Bacon Pancakes

4 tbsp coconut flour
1/2 tsp baking powder
1 tbsp dark cocoa powder
1 tsp coconut sugar
1/4 cup unsweetened almond milk
1 tbsp greek yogurt
4 egg whites
1/2 tsp chocolate extract

2 strip turkey bacon, microwaved and broken into bits
1 Banana Nut Muffin Quest Bar, broken into bits
1/2 banana, sliced
maple syrup
2 tbsp PB2, mixed to a thick sauce
3 tbsp almond butter

Mix flour, baking powder, cocoa, and sugar together.  Add milk, yogurt, extract, and egg whites; incorporate well.  Batter should be thick.  Add one strip of bacon crumbles and half of the Quest Bar bits; mix into batter well.  Spoon onto heated skillet; cover pan and cook 3-5 minutes.  Flip pancakes, remove from heat and let sit for a minute.

Create stack, spreading 1/2 tbsp almond butter between cakes (skewer, if needed).  Top with remaining almond butter, PB2, banana slices, remaining quest bar bits and bacon crumbles; finish off with maple syrup.

 He is a happy camper.  As he should be.

 I bet if you used the bacon grease in the batter, you could make these into waffles!  I'm not a fan of eating bacon grease, but to each his own, right?

 I think Dad will eat these.  I think he'll be in heaven.  I won't even tell him they're pretty healthy.

He knows me pretty well, though.  He'll probably assume I wouldn't try to get him to eat something that wasn't clean and healthy.

 Plus, he reads my blog so I just gave myself away.  DANGIT.
