Chocolate Baked Zoats with Pumpkin PB2 Fluff

My new workout program = new gym routine = new breakfast routine = new breakfasts!
 I've been eating outside the box.  It's weird.

In a good way.
 I college-baked my zoats this morning.

Meaning, I microwaved them.

Let me explain.
 Chocolate Baked Zoats

150 gm zucchini
1/4 cup almond milk
2 tbsp pumpkin
2 tbsp greek yogurt
2 tbsp oats
2 egg whites
1 tbsp cocoa
stevia
cinnamon

Mix zucchini, almond milk, cinnamon and stevia; microwave 2 minutes.  Stir, microwave another minute.  Add all other ingredients; mix well.  Microwave 2-3 minutes until cooked to desired done-ness.  Top with Pumpkin PB2 Fluff (recipe follows), maple syrup, and a splash of almond milk.

Pumpkin PB2 Fluff

2 tbsp PB2 powder
2 tbsp pumpkin
1 tbsp chocolate peanut butter spread (Walden Farms)
1/8 tsp caramel extract
stevia

Mix all ingredients well.  Thin out with water, if desired.
 So delicious.  Like cake, but breakfast cake.
 Aaaaaand just a few shots of other deliciousness recently.
Cake in a squash.  And oldie but goodie.
 Zoats!
 Chicken Burger Salad.
 Sauteed some cabbage, turnips, radishes and seasoned with onion, garlic and dill.  Added some baked chicken, some ketchup and mustard, and a little nutritional yeast.  Tastes like a cheeseburger.

But not.
 Remember when I said I was eating outside of the box?

This is what happened yesterday.  For the first time since I have no idea when, I had a savory first breakfast.  No zoats.  No pancakes.  Savory veggie hash with savory chicken and eggs.

And I didn't have a seizure.


Oh, and would someone tell Colorado that it's May?
