Most Favorite Pancakes of All Time.
I picked up some instant espresso powder while browsing Williams Sonoma for a kitchen gadget a coworker had told me about. I used to use espresso powder during The Cupcake Era, so I figured I could find something to use it in; something in which my regular old instant coffee wouldn't quite suffice. I told Juan about my new powder at work and he told me about Mexican Hot Chocolate and Mexican Coffee drinks.
I immediately realized pancakes needed to be made.
The thought of these pancakes and how delish they were going to be helped get me through Leg Day this morning. Pancakes and my Beats, of course.
Morsels of chocolatey-espresso-ness. They didn't disappoint. Not. One. Bit.
Mexican Coffee Pancakes
3 Tbsp coconut flour
1/4 tsp baking powder
1/2 tsp cinnamon
1/2-3/4 Tbsp dark cocoa
1/4-1/2 tsp instant espresso powder
dash of cloves
3 egg whites
1 Tbsp greek yogurt
1/4 cup chocolate almond milk
Mix dry ingredients. Add greek yogurt and milk; mix well. Incorporate egg whites individually. Batter should be thick. Spoon onto heated pan. Cover pan. Let cook 3-5 minutes until tops are set. Flip; turn off heat. Stack those babies on a plate.
French Vanilla Espresso Yogurt Sauce
2 Tbsp greek yogurt
1/4 tsp instant espresso powder
1-2 packets stevia
1/2-1 Tbsp french vanilla SF syrup
Mix ingredients well. Add syrup to desired consistency. Spoon onto pancake stack. Sprinkle with cinnamon.
My next attempt at these will include chili powder - true Mexican Hot Chocolate Pancakes. Yeah buddy.
It's like a fiesta in my mouth. A chocolate fiesta.
