Double Chocolate Blood Orange Pancakes

I think it's citrus season.  I seem to remember that being around this time of year.

It doesn't seem citrus-y around here.  It's been snowing for over 12 hours straight.  We have seven plus inches of snow on the ground.  Snow does not equal citrus in my brain.
 But I saw blood oranges at the market the other day.  Wilberforce loves blood oranges.

And I love Wilberforce.

So I bought a blood orange.
 Then I ate it.

I guess that defeats the purpose of buying it for Wilberforce.
 Ah well.

Double Chocolate Blood Orange Pancakes with Chocolate Orange Espresso Sauce

3 tbsp coconut flour
1 tbsp dark cocoa powder
1/2 tsp cinnamon
1/4 tsp espresso powder
1/2 tsp baking powder
2 pkt stevia

1 tbsp greek yogurt
1/4 cup unsweetened almond milk
3 egg whites
1 tbsp blood orange juice
1 tsp blood orange zest
1/4 tsp vanilla extract
1/2 Chocolate Brownie Questbar, chopped

Mix dry ingredients.  Incorporate wet ingredients.  Mix in zest and chopped Questbar.  Spoon onto heated skillet.  Cover pan, cook 3-5 minutes until top of cakes are set.  Flip; remove from heat and leave covered another minute.  Create stack.

Mix 1 tbsp dark cocoa powder, stevia, 1 tsp blood orange juice, 1/8 tsp espresso powder, water, and SF maple syrup to desired consistency.  Pour sauce over pancake stack.  Top with additional blood orange zest and pieces of blood orange.

Feast.

 I may or may not have licked the plate clean.
