Cinnamon Grapefruit Pancakes - And Crazy Melons

Cinnamon and Grapefruit.
 Like pickles and peanut butter.  Salmon and chocolate.  Mustard and grape jelly.
 Cinnamon Grapefruit Pancakes were just what I needed to kick off six days of vacation.  Or more importantly, six days without work.  I don't care if I have to cough up $7 for a carton of almond milk or $5.34 for a dozen eggs at a convenient store because every other grocery store is closed at midnight - I will not walk through the doors of a Walmart until I have to go back to work next week.

Mark my words.

Pretty easy for me to say, since I don't foresee myself being awake at midnight any time soon.  I don't do midnight anymore.  Not since the good ole days of yore.  And 2009.

So...what were we talking about?
 Oh yes.  Cakes.  Made in a pan.

Tooty fruity.  Spicy dicey.  Delicious smishous.

Base recipe is that gem from Spoonful Of Fit, which I doctored up a bit.  As per usual.
 Cinnamon Grapefruit Pancakes

3 tbsp coconut flour
1/3 tsp baking powder
1/2 tsp cinnamon
2 pkt stevia
grapefruit zest (to taste)
1 tbsp greek yogurt
1/4 cup almond milk
1/4 tsp almond extract
3 egg whites

Mix dry ingredients.  I used the zest of a little less than a quarter of a grapefruit.  My cakes were really grapefruity, which is how I wanted them, but you might use less if you don't love that tang as much as I do.  Incorporate wet ingredients well.  Batter should be thick.  Spoon onto heated skillet; cover pan, cook 3-5 minutes.  Flip cakes, remove from heat and let sit for another minute.  Create that beautiful stack.

For the sauce I mixed greek yogurt with stevia, cinnamon, grapefruit zest, a little juice from the fruit, and a little maple syrup.
 I suppose I should enjoy my grapefruit while I'm still statin-free, eh?  Bahahaha.

A little drug dealing humor.  
 I realized I really like doing things the most unnecessary way possible when I was squeezing juice for the sauce.  Rather than cut the fruit in half like a normal person, I decided poking a hole in it and squeezing the juice out that way was a better idea.

It wasn't.

And I ruined the prettiness of the inside so I couldn't cut wedges for my pictures.  Always thinking ahead, I am.
 Still tasted pretty freaking delicious.

Something that was not delicious?  The alien melon.
 Save yourself four bucks and don't buy one of these if you see it at the store.  Yuck.


I'll stick with normal produce.  Like grapefruit.
