Where'd August come from? And where'd July go?

Summer.

The weekly update via instagram pictures.  Because my phone is a lot easier to carry around than a ten pound camera.  :)
Blogging :)

My new snack of choice...either a lettuce wrap or crepe stuffed with mashed peas, grilled chicken, pumpkin, dijon mustard, cilantro, and bean sprouts.  Mmmm mmm good.  

See? Looks tasty, huh?  Say what?  It looks like barf?  Erroneous!!
I'm getting better at my food photography with my phone.  A grapefruit a day!
Gotta have healthy snack options at work, too!
I got these moccasins for ten bucks...cheapo shoes.  Not a good choice when standing on your feet for 10 hours straight.  Especially on a day you forgot to wear your compression hose.  Boo.  
Banana.  Wilberforce calls me a monkey - I usually have at least one bunch of bananas in my grocery bag...if not 3 bags full.  Nature's sweetener...we put them in everything.  Ice cream.  Smoothies.  Oatmeal.  Porridge pudding.

This was the day I discovered I could cook my egg whites into my oatmeal, rather than wasting time making a separate omelette.  Plus, the egg whites make my oatmeal much thicker...more oatmeal = happy Manda. 
The worst part of my day is when I finish off the last bite of my oats.  Everything good must come to an end, eh? 
This was the day I drove 15 miles out of my way coming home from work to grab something at the mall quick, only to find out the mall had closed 30 minutes earlier.  Not cool. 
Spent 11 hours cleaning the house on Monday.  I made it through half of this list.  That is just not right, ya know? 
Mashed pea lettuce wrap with grilled eggplant and maters.  Where has eggplant been all my life?  I freakin love that stuff.  Smother it in mustard and I could eat a whole plant myself. 
My first shot EVER at cooking tofu.  Seasoned it with cinnamon and Stevia, cooked it over the stove for a bit, topped it off with maple syrup and homemade strawberry jam.  French toast style tofu.  Pretty delicious. 
Homemade chocolate ice cream.  Yeah baby. 
Finally wearing the scarf Wilberforce bought me for Christmas last year.  A scarf in August...timing is my strong suit. 
Discovered a new way of making hard boiled eggs in big batches! My hard boiled eggs made over the stove rarely turn out right, but these are fool proof!  Fill cupcake tins with eggs, then toss them in a preheated oven at 350 degrees for 30 minutes.  Perfecto!  Plus they peel like a dream. 
Made up this little taste creation a few nights ago and haven't been able to stop eating it since.  It's a porridge/pudding-ish thing made with cooked quinoa, egg whites, special dark hershey's cocoa powder, chocolate almond milk, stevia, cinnamon, bananas, and PB2.  A. M. A. Z. I. N. G.  Warm or cold, either way.

Warm quinoa porridge...pumpkin peanut butter banana butterscotch flavor.  You heard me. 
The same as above, but oatmeal rather than quinoa.  
Wilberforce and I went for a nice walk earlier this week.  We found Mertle the Turtle chillin' by a sprinkler head next to the side walk.  He peed on me.  The turtle, not Wilberforce.  
These are the conversations I have with my coworkers.  Sometimes they have the best parenting advice, eh? 
My dessert after lunch at work.  That's a maple blueberry donut hidden in there.  
Got a new heart rate monitor watch so I can figure out how hard I'm working it out when I'm working out.  Went on a run this morning outside!
A little chilled pudding porridge, a little peanut butter banana oatmeal cookie, a little apple.  Perfect morning snack. 
Today marked the beginning of Wilberforce and my four day weekend.  We kicked it off with sushi and drinks for lunch.  Drinking at noon on a weekday is wrong...but feels so right. :)

Wilberforce opened my fortune for me and burst into laughter.  I read it and said "no, Mr. Fortune Cookie, I don't do carbs...whether it's today or tomorrow".  
Holy sashimi!  If you had told me a decade ago I would enjoy eating raw fish at some point in my life, I would have punched you in the mouth.  Yet, here we are, eating sashimi. 
Dad!  These are for you.  Don't worry, I'll eat them for you before they go bad.  The old man in the van is back at the truck stop with his Colorado peaches...fresh from the Western Slope.  His wife said they're bringing the pears next week!  
We classed it up today with our paper plates.  Very patriotic.  Supporting Team USA at el Olympics-o.  
Dinner!  Oven roasted sweet potato fries with pan seared ginger-garlic tilapia.  And mustard.  Always mustard. 
After our dining experience at La Casa de Clark, we retired to the rocking chairs on the porch to watch the neighbor kids wipe out on their bikes while we enjoyed the evening sunshine. 
Ok, last of the night - Wilberforce made himself some Vanilla Almond Ice Cream...topped with Colorado peaches and pecans.  He was a happy Wilberforce.
