I didn't even find it on the internet. I found it in a book. I had a book in my cupboard.
I found a recipe for Spinach and Cream Baked Eggs. Did I mention it was in a real book with real pages that I held in my hands?
Anyways, I modified the recipe a bit to incorporate crap I had in my cupboards (which is where I found the real book that this recipe was in), and to increase the health factor a bit.
So, step one: spray some olive oil Pam on a pan, toss in a bunch of ground ginger, and fill that pan up with spinach. Use lots of spinach. You'll cook it until it's wilted, so it will shrink considerably.
Still cooking. This only takes a minute or two. Keep stirring.
While wilting the spinach, find some little oven safe dishes. Oh yeah, and preheat your oven to 325 degrees. Grease the baking dishes...unless you like scraping your breakfast off the dishes...whatev.
By now, your spinach should be sufficiently cooked. You should have a pile of what I imagine canned spinach looks like: dark green, unidentifiable pile of spinach. No crispy beautiful leaves here anymore!
Line the bottom of your baking dishes with the cooked spinach.
If you're feeling generous, pile a little extra spinach in your husband's dish. If not, eat it.
Next, crack some eggs in el disho. We're a pretty nutrition conscious family here, so I used three egg whites in Wilberforce's dish, and two egg whites in mine. The original recipe calls for two whole eggs...and also nutmeg rather than ginger. This is the point where you add a splash of cream or milk to the dish. I used fat free milk, but I imagine heavy cream would be delish.
I had feta cheese in the fridge, so I crumbled that on the eggs and topped it all off with a little salt and pepper. The book recommends parmesan cheese, but next time I'm going to try some crumbled goat cheese. Mmmmmmm.
Throw the tasty little creations in the oven for a while. The recipe says ten minutes or until egg whites are opaque. I've made these twice and it seems to be closer to 15 minutes before they're finished.

Wilberforce says he would like some sauteed onions and mushrooms on his next time. I would like some chicken or turkey added for a breakfast-for-dinner meal.
I've been on a spinach kick lately. I found a giant container of spinach at Safeway the other day; it's lasted us a whole week, which was awesome! I went back to get another tonight after the gym, but the giant containers were gone. Figures.
Tomorrow, I shall try something I never thought I would dream of making in my home, much less drinking.

This spinach smoothie supposedly does not taste like spinach, but is rather quite tasty. I will be the judge of that tomorrow morning.
This thing has a frozen banana, fat free vanilla greek yogurt, skim milk, natural peanut butter, and five hundred pounds of baby spinach, all blended up into a giant glass of green power. I believe it has approximately 59,343 grams of protein and fiber. Approximately.
I want to add some blueberries, but I don't want to ruin the bright green color, and I'm looking forward to the weird looks from the girls at the pharmacy when I walk in with this in my hand tomorrow. Did I tell you about the berries? Buy one get two free on blueberries, strawberries, and blackberries at the grocery store this week. I've never eaten a blackberry in my life and I don't know why!!! They. Are. Delicious. I found the largest tupperware container I owned, dumped all nine containers of berries together and have been adding berries to everything I've eaten the past three days.
Would you like a chicken spinach salad with berries? Sure!
Would you like some yogurt and berries? Sure!
Would you like some granola and berries? Yes please!
Would you like some baked cod and berries? Why not?
Would you like ketchup and berries? No reason to quit now!
Huh? I'll let you know how the spinach smoothie attempt turns out.
