Blueberry Lime Cupcakes and Sunshine

This weekend was wonderful.
How can a beautiful day like this not be spectacular?
Wilberforce was excited because it was Colorado holiday - the Broncos were in the playoffs.
Everywhere we went, people had their game day orange and blue on.  Employees everywhere were decked out in Broncos gear.  Even our local cafe had festive sweet treats!
You know what makes my day spectacular?  Starbucks.  Mmmmmmm.

We made Wilberforce's favorite treats the other day.  Evil Schemers.
I've posted about these before, me thinks.  I bought Wilberforce an evil schemer pan for Christmas.  He loves it.
We made sweet evil schemers filled with caramel and berry preserves and fudge.  Then we dusted them in powdered sugar.
We also made savory ones filled with spinach and goat cheese, sprinkled with sea salt.
 They're pretty much awesome.
 Healthy? No.  Delicious?  Of course!

I haven't baked anything in almost two weeks.  I've been getting the shakes since I haven't been in contact with my Kitchen Aid.  Scary.  So today I broke down and threw together some blueberry lime cupcakes.
I've never considered the combination of blueberry and lime before.  They turned out pretty tasty.  I didn't realize the recipe only made 14 cupcakes until I had 24 liners half filled and no more batter.  Boo.
Found this recipe on a site I found randomly: Blueberry Cupcakes with Lime Cream Cheese Frosting
The lime cream cheese frosting is pretty tasty.  It has lime zest in it...you can see the specks up close.  I debated adding some green food coloring, but decided against it.
Is it weird to make fruity cupcakes in the middle of winter?  I think not.  However, I think these would also be super wonderful to eat by a pool with a big ol' glass of pink lemonade.

I have the cupcakes, now I just need the pink lemonade.  And the pool.  And the 80 degree weather.

Almost there...
