Pumpkin Spice Banana Nut Bread


Seriously.  This flooding is really craptastic for, well, every reason except one.


My baking is getting some serious practice.

 Best recipe I've ever made up, all by myself?
 Uh, duh.

I mean, look at that!  I died a little with each bite.
Banana bread is pretty much the coziest creation in the history of baking.  Who doesn't love nibbling (or devouring) a warm slice of fresh banana bread?  

Don't tell me your little heart didn't get a little excited when you saw brown bananas on your mom's kitchen counter.  You knew what was coming.  And you were happy, happy, happy. 
Now imagine that warm loaf of banana goodness, with a spice of pumpkin pie, the warm nuttiness of pecans, and the crunch of pumpkin seeds.  
 Gah.  Face plant.
 Next time I bake this, I'll tack on a few extra baking minutes.  The loaf was a little underbaked in the very center, but still delicious.

I may have just stolen half a slice from the fridge.  The moist gooey center is fabulous when chilled, FYI.

Pumpkin Spice Banana Nut Bread
makes one loaf

Ingredients:
180 g banana
100 g pumpkin
36 g unsweetened applesauce
180 g egg whites
60 g unsweetened almond milk
1 1/2 tsp vanilla extract
2 droppers stevia

140 g oats (60 g oat flour, 80 g whole rolled oats)
40 g coconut flour
2 tsp pumpkin pie spice
2 tsp cinnamon
1/2 tsp nutmeg
1 tsp baking powder
1 tsp baking soda

50 g raw pumpkin seeds
20 g chopped pecans
(omit seeds and nuts to reduce caloric value and fat content**)

Directions:
Mix wet ingredients well.  Combine dry ingredients and mix well.  Add dry ingredients to wet ingredients, mix until incorporated.  Fold in nuts and seeds of choice. 

Spoon batter into greased loaf pan.  Bake in preheated oven at 350F for 60 minutes, or until knife inserted in center comes out clean.  Allow to cool for 5 minutes; remove from pan and allow to cool completely.
