And Happy Birthday Pancakes!
He's the big 2-9 today. Last year of his twenties. What an old man.I used the same recipe from Spoonful Of Fit and modified it to taste like birthday cake! I may have added some sprinkles, too, if you hadn't noticed.
And candles. Cause it's not officially festive until there are candles burning.
Confetti Birthday Cake Pancakes
4 tbsp coconut flour
1/4 tsp nutmeg
1/4 tsp cinnamon
1/2 tsp baking powder
2 pkt stevia
1 tbsp greek yogurt
1/4 cup almond milk
4 egg whites
1/2 tsp vanilla extract
1/4 tsp almond extract
1/4 tsp butter extract
SPRINKLES SPRINKLES SPRINKLES
Mix dry ingredients well. Add wet ingredients; incorporate completely. Batter should be thick. Stir in sprinkles. Spoon onto heated skillet; cover pan and cook 3-5 minutes until tops of cakes are set. Flip, remove from heat. Create pancake stack.
Birthday Cake Sauce
1 scoop birthday cake whey protein (I used About Time)
1 tbsp greek yogurt
1 pkt stevia
SPRINKLES SPRINKLES SPRINKLES
Mix all ingredients; add water or almond milk as needed to reach desired consistency. Spoon sauce over pancake stack. Add candles. Light candles. Sing Happy Birthday. Blow out candles. Dig in.
If you don't have a birthday boy in the house right now, it's okay to make these for yourself.
You still have to have candles. And you still have to sing "Happy Birthday".
Singing makes them taste even better. Promise.
