Zeggs & Zoats: The Recipe
I post a lot of food pictures on Instagram. Usually, the prettiest meal of my day (because it's not in a tupperware container, eaten in the back room at work) is my breakfast. Nine times out of ten, my breakfast is zoats or zeggs, and it never fails that someone will ask what they are and how to make them. It's hard to type out a recipe 4,342 times on my phone, especially when I'm busy at work.
So here are the basic recipes! Problem solved.
First of all, "zeggs" are zucchini and egg whites cooked in a small amount of water to resemble oatmeal. "Zoats" are the same thing with the addition of oats. Zoats are a great way to increase the volume of your breakfast, if a bowl of plain oatmeal doesn't quite leave you feeling full enough. Zeggs are a wonderful way to cut carbs while still letting you enjoy a nice big bowl of something warm, cinnamon-y, and filling in the mornings...if that's how you roll.
Zoats:
Bring 1/2 cup water to a boil. Add cinnamon, stevia, and/or other desired spices, flavors, and sweeteners. Add 4-6 egg whites to boiling water, reduce heat to medium and stir constantly to avoid poached egg whites. Once mixture is primarily opaque, mix in 1/4 cup oatmeal and stir well. Next, add 100 grams shredded zucchini (or more if you want! I used to use almost two whole zucchini!) and stir well. Allow to cook over medium low heat, stirring frequently. This is where I add 1 tbsp cocoa, if I'm going to make chocolate zoats, as well as additional sweetener and extracts, if needed. Allow zoats to cook until your desired consistency is met. The longer you cook them, the mushier and less "piecey" the zucchini becomes.
Zeggs:
Bring 1/4 cup water to a boil. Proceed the same as the recipe for Zoats, just omit the addition of the oats.
Dump in a pretty bowl, top with sliced fruit, spiced squash, syrups, PB2, nuts, Questbars, chocolate cake, protein cookies, or anything else your little heart desires!

ReplyDeleteI've made zoats this morning before finding your blog (found recipe somewhere on Instagram), but your recipe is far more detailed and I also love the idea of zeggs. I would never think about making egg and zucchiny mixture in sweet version. Thanks for inspiration!
