Chicken 'n Waffles. That's what they do in the South.
I think. At least, I've heard. Whatever.
I had never heard of "Chicken 'n Waffles" until I went to a diner in Denver for breakfast with a bunch of Pharm Girls a couple years ago. I didn't have any, but the combination seemed...odd.
Yes, Amanda thought a food combo was odd.
I saw a clean version of Chicken 'n Waffles on Instagram (where else?) a week or so ago, and Wilberforce spied them also. He demanded Chicken 'n Waffles, so like the good wife I am, I said "yes dear".
And if you believe that's how it went down, I've got some ocean front property in AZ I want you to take a look at...
But I digress. I drug Wilberforce out of bed before sunrise this morning, we threw on a few layers of clothes, and went for an Easter morning sunrise run. It was spectacular. Less spectacular for W, who's cardio generally consists of lifting weights, faster, but he kept up for the most part. We made it home, thawed out some chicken, and whipped up some Easter Breakfast Chicken 'n Waffles.
It was delicious. Those folks in the South really know whats up.
Clean Chicken 'N Waffles
Chicken:
Cut chicken breast into strips, season with cinnamon and chili, cook in stove top cast iron skillet. Could also coat with coconut flour, chili, cinnamon, and egg white mixture and bake in oven.
Sauce/Glaze:
1/4 cup sugar free maple syrup
1 tbsp dijon mustard
1/2 tsp chili powder
1 tsp cinnamon
Waffles:
1/4 cup coconut flour
1/2 tsp cinnamon
1/2 tsp chili powder
1/4 tsp baking powder
1 tbsp greek yogurt
1/2 tbsp coconut oil, melted*
1/4 cup unsweetened almond milk
4 egg whites
1/4 tsp maple extract
stevia to taste
*can be omitted. I read the addition of oil makes the waffles crispier on the outside, as opposed to the soft outside of pancakes
Heat waffle iron; coat well with cooking spray. Place batter on waffle iron, close lid, cook as you would any other waffle. I made three waffles with this batter.
Plate waffles, top with cooked chicken, smother with dijon maple glaze and additional maple syrup.
Dig in!
