Strawberry Mango Banana Bread

Strawberries.  Yum.

Mangos.  Yum.

Bananas.  Yum.

Bread.  Yum.
 I had so many productive plans for my week away from work.  Cleaning.  Building.  Gardening.  Moving furniture.  Hanging pictures.  Painting.

How many projects have I done from my list?  Zero.

But I've made some freakin' good food.
 Strawberry Mango Banana Bread?  No exception.
 This might be the best bread yet.  Super moist.  Chock full of fruit.  Cinnamony.  Gingery.
 I can't even think of any toppings that would be appropriate for this bread, it's so amazing all by itself.
Strawberry Mango Banana Bread

Ingredients:
2 medium ripe bananas
1/4 cup unsweetened applesauce
1/4 cup non fat greek yogurt 
1/3 cup Stevia in the Raw (cup for cup)
2 teaspoon vanilla
2 cups oat flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
1 ripe mango, cut into chunks
1/2 cup diced strawberries
1 strawberry sliced thinly for topping
Yield: 10 slices, 109 calories per slice
Preheat oven to 350°F.  Grease 9x5 loaf pan. 

In a large mixing bowl, mash the bananas well. Add the sugar, applesauce, yogurt, and vanilla; mix well.
Whisk dry ingredients in separate bowl, add to wet ingredients.  Use a wooden spoon to mix until the wet and dry ingredients are just combined.  Fold in mango and strawberries.
Transfer the batter to the prepared pan and top with sliced strawberries.  Bake for 40 to 45 minutes. The top should be lightly browned and a knife inserted through the center should come out clean, or with just a few crumbs.  Remove from the oven and let cool for 20 minutes before transferring out of a pan and onto a wire rack to cool completely.
 Is it snack time yet?
 Ok seriously, I'm going to go do something productive with my afternoon.  Something that doesn't involve the kitchen or the computer.
However, I might stop in the kitchen for a snack.  Don't hate.
