I've never had banana pancakes. Not sure I would like them. I love bananas and I love pancakes, but I'm not too enthusiastic about the two together.
However.
Do you like ice cream? What if I told you I had a recipe for the most amazing ice-creamish treat...that only includes one ingredient???
You're crazy. I'm crazy.
The single ingredient of this amazing ice-creamish treat, you ask?
Bananas.
I kid you not, my friends.
Peel a few bananas. Stick 'em in the freezer until they're...uh...frozen. Now would be a good time to purchase a Ninja...from Walmart...the Kitchen Ninja. Ah-may-zing. Pull the frozen bananas out of the freezer, chop them into pieces so they fit in the Ninja (or blender or food processor or whatever you have), and go to town!
I heard about this idea from a friend. I blended the bananas a few seconds and they turned into a chunky mush - this is what happens when you do two things wrong.
1. Don't have completely frozen bananas.
2. Don't blend long enough.
So Ninja the crap out of those bananas until they have the consistency of homemade ice cream...nice and smooth. Then grab a spoon and start eating.
Seriously. That's it. Freeze, blend, eat.
No added sugar. No milk. No cream. Just bananas.
I threw in a tablespoon of natural peanut butter and blended that into the mix. Tasty! You have got to try this - you won't believe how amazingly delicious this stuff is. Can you think of anyway to make healthier ice cream than this?

Anyways, I stole the last of Wilberforce's coffee, found an old box of cereal, some fruit, and wah-lah! An inviting breakfast in bed...if I hadn't already told you it was old coffee and stale cereal.
Everyone makes fun of my pillow addiction when they stay in the farm room. I can't help it. I like pillows. Lots of pillows.
